Up late attempting to candy a big batch of peanuts. I say attempting because even after years in exec roles and years owning my own chocolate shop, I’VE NEVER PROPERLY CANDIED NUTS. There, I said it. It’s one of several holes in my knowledge and that hole is full of shame and horribly candied nuts.
I insta- stalked @krissharv3y and used his method here. I feel like it’s a good start, but not great. I’m thinking I either didn’t cook the 2nd time long enough, or did the 2nd cook at too high of temp then they started to scorch a bit so I panicked, or I didn’t add enough cocoa butter at the end. Or all of the above ????????♀️ They taste amazing and don’t stick together, but they’re not as smooth as @krissharv3y and don’t appear to be as “sealed”.
